PEPPER SAUCE

CRISPY OVEN-FRIED FISH

Kyenam (Fante, Ghana)
2 pounds fresh perch, butterfish, or trout, cleaned
1 teaspoon salt
Juice of l/2 lemon
l /2 cup cooking oil
1 teaspoon powdered ginger

Season fish with lemon juice, ginger, and salt. Arrange fish on a shallow greased baking tray and brush with oil. Bake in a preheated oven at 300°F. until fish is brown and desired crispness is obtained. Cook and serve with gravy or hot pepper sauce.

SHRIMP KEBABS

Sesew Kyinkyinga (Fante, Ghana)
2 pounds fresh large shrimp, cleaned
1 teaspoon curry powder
1/4 cup lemon juice
1 teaspoon white pepper
Salt to taste
1 medium onion, minced
l/2 pound mushrooms (optional)
l/4 cup melted butter
1 cup tomato juice

Season shrimp with lemon juice and salt. Let stand for 10 minutes. Clean mushrooms. Mix remaining ingredients together. Alternate shrimp and mushrooms on skewers; coat with mixture of remaining ingredients and arrange in a shallow baking dish. Bake in a preheated oven at 350°F., turning from time to time until shrimp are done and sauce dries up. Baste constantly. Serve hot

GRILLED RED SNAPPERS

Wiwuru How (Fante, Ghana)
3,1-pound fresh red snappers, cleaned
Salt and pepper to taste
l/4 cup lemon juice or vinegar
Stock from cooked shrimp
1/4 cup Worcestershire sauce
Lemon slices
1/4 cup ketchup
l/4 cup cooking oil
Pinch of rosemary
1/2 pound large shrimp, shelled boiled in a little water with butter

Combine all ingredients except oil and shrimp and brush all over fish. Cover and let stand for 20 minutes to marinate.Place marinated fish on a greased baking tray. Preheat oven to 350° F. Bake slowly until fish is tender. Baste with oil occasionally. Garnish with shrimp and lemon slices just before serving.

Serve warm.

BROILED SEASONED MACKEREL

Mposawee (Fante, Ghana)
3 (2-pounds) fresh mackerels, cleaned
1 teaspoon white or black pepper
2 tablespoons lemon juice
1 teaspoon paprika
2 tablespoons melted butter or oil
Lemon slices (optional)
1 teaspoon seafood seasoning (optional)
Parsley (optional)
1 teaspoon salt

Place fish in a baking tray, sprinkle with lemon juice, then brush all over with melted butter or oil. Mix all seasoning together, then sprinkle evenly on all sides of fish. Bake seasoned fish in the middle of a preheated oven at 350°F. until it begins to brown. Turn gently and brown the other side. Allow to cool off in the oven. Serve hot or cold, decorated with lemon slices and parsley, and one or several of the suggested accompaniments.

PEPPER SAUCE

Kpakpo Shito (Ga, Ghana)
14 to 16 hot red and yellow peppers (fresh or pickled)
2 medium tomatoes, diced
1 medium onion, chopped
Salt to taste

Put all ingredients in a blender and grind for 30 seconds. Pour mixture into a bowl and set aside to defoam before serving. Do not serve immediately after grinding. Wait about 15 minutes.

Serve raw sauce (without heating) with Steamed Crabs.
Serves 4
ACCOMPANIMENTS: Avocado slices ,Sliced onions ,Tomato roses,Banana peppers (sweet yellow peppers)
Note: Pepper Sauce is used as a dip. Ketchup or Worcestershire sauce may be added while eating to minimize the pungent quality of pepper. Extra slices of tomatoes and onions may be served with sauce.
